I. INTRODUCTION

The profession of harvesting bird’s nest has been present in Khanh Hoa for about 600 years. Bird’s nest has always been considered a very rare specialty, often only present in banquets of royal dynasties.

Currently, in addition to the majority for export, some products from bird’s nests have been widely consumed domestically, because the exploitation output has increased many times compared to before, and at the same time, in addition to the exploitation from nature, the profession of raising birds in houses to collect nests is being formed and developed.

It is worth noting that Vietnamese bird’s nests always have high prices on the world market, much higher than bird’s nests from other countries in the region (for example, they can be 5 times higher than Thai bird’s nests). The reason is that the swiftlets in Khanh Hoa sea only make nests and reproduce seasonally, the nests are made only of saliva, without many impurities. Currently, each year the swiftlet nest industry brings in about 40 billion VND to the provincial budget, and is creating a brand that is certainly in the international market: “Asia Bird’s Nest Brand” . .
